State of a cell when selected

How do you change the state of a cell in the didSelectRowAtIndexPath… data source method? It seems that the default action is for the cell to change its color to blue when selected, but what if you dont want anything to happen. On that note, how do you keep the cell selected when you select another cell in the table (2 cell's are colored blue simultaneously. Basically, I want to allow the user to select multiple cells, and see previous selections.

Also, how do you implement hide/show accessories in table cells (like check marks)?
